I'm celebrating my Weight Loss! I had RNY in October and have lost 64 lbs since! Each day is a learning process and a new discovery. I finally am able to look in the mirror and like seeing the woman who looks back at me. I love to cook and entertain. I enjoy all types of events and look forward to becoming a more active participant instead of a spectator!

BIG FAT WoW Moment!

That's right, I said it... Fat! I am fat!!!

I am overweight and danged happy about it! I have finally pushed past the obese mark and am just a healthy overweight chic!

I am amazed and still impressed with this wonderful tool I have been given. I am so fortunate to be able to get a second chance at becoming healthier and happier due to the ability to be all that I was unable to be or do before. I am so thankful daily that I made the decision to have WLS. There were times during my decision making process that I had no faith in myself and feared I would be a failure.

After going through this type of surgery though, my resolve strengthened and I know that I can reach healthy reasonable weight loss goals.I am so excited to have a BMI now of under 30! I will continue to perservere and get to where I want to be.

It wasn't long ago that I was eating everything in sight, especially sugar (and icing!). Now instead of eating 2 packs of Quaker Weight Control Oatmeal for breakfast, I either eat a pack or a half of pack if I'm having a late breakfast. I usually had a half of a miniature box of Sunmaid Raisins in the cup. The trick to making the raisins extra yummy is to add the raisins in a microwavable cup with enough water to cover them and then put them in the microwave for 20 seconds; that plumps them up and makes them tender and juicy! Afterwards, I add the oatmeal and the water and microwave for up to 30 seconds.. WATCHING it CLOSELY so it doesn't boil over. Once it starts to boil I stop the microwave, let it simmer down and then turn the microwave back on until it's finished, checking for boil-over and stopping and starting it again if I need to.

Last night for dinner, I wanted a bunless cheeseburger, but didn't want my SO to scoff about not having bread. I made Pizza Wheels instead.

Pizza Wheels
1 large egg, beaten
1 1/4lbs lean ground beef
Seasonings to taste (Pizza Seasoning, garlic powder, dehydrated onion flakes, red pepper flakes)
1/4 c. of starch (such as bread crumbs, crackers, crushed sugar-free cereal,... I used instant mashed potatoes)
1 small can of tomato sauce
Hormel Turkey Pepperoni
Hormel Real Bacon Pieces
Kraft Shredded Fat-Free Mozzerella Cheese


Beat egg, and fold in ground beef with seasoning, add 1/4 c. instant mashed potatoes or other starch. Make 5 equal size balls of ground beef and then flatten the middle and build up the sides so they are twice the height of the center... similiar to a wall around it or a pie crust.

Bake these for 20 minutes in a 350 degree, take them out of the oven and then season the tomato sauce with pizza seasoning and red pepper flakes and pour some in each cavity of the burger-wheels.

Cut the pepperonis into smaller pieces and place them on top of the sauce, add the bacon bits and cover them in Fatfree Mozzerella Cheese. Bake these for another 20 minutes or until a toothpick inserted in the side at the bottom comes out with clear juices.

Everyone in my family thought they were delicious!
